An unforgettable dinner at The Connaught Hotel in London featured a selection of mature vintages from the prestigious Domaine de la Romanée-Conti, paired with special dishes crafted by chef Hélène Darroze. Michael Schuster describes it as one of the most memorable culinary experiences of his career.

The event, held on December 11, 2024, was inspired by the longstanding relationship between The Connaught and Domaine de la Romanée-Conti and aimed to highlight the unique terroir and different vintages of Pinot Noir. The dinner’s meticulous planning began in summer 2024, with discussions led by Adam Brett-Smith from Corney & Barrow, to ensure an exciting wine lineup.

In the elegant Maple Room at The Connaught, around thirty guests gathered, characterized by their diverse styles of attire and their apparent passion for fine wine and food. The setting, adorned with tasteful decorations, promised an intimate yet festive atmosphere.

The dinner featured six courses, each paired with a different wine. The experience began with a 2008 Billecart-Salmon Cuvée Nicolas François Billecart Brut as an apéritif, followed by a series of pairings that showcased the complexity and richness of both the wines and the dishes.

  1. Caviar with 2014 Domaine de la Romanée-Conti Montrachet Grand Cru: The exquisite caviar was complemented by the wine’s minerality and floral notes, establishing a harmonious start to the evening.

  2. Onion Soup with 2019 Domaine de la Romanée-Conti Vosne-Romanée Premier Cru Cuvée Duvault-Blochet: The sweet and savory flavors of the onion soup paired excellently with the fruity, juicy characteristics of the wine, earning praise from guests.

  3. Veal Sweetbread with 2010 Domaine de la Romanée-Conti Grands-Échézeaux Grand Cru: The dish featured tender veal paired with a rich wine, demonstrating a delightful balance of flavors.

  4. Turbot with 2005 Domaine de la Romanée-Conti Romanée-St-Vivant Grand Cru: The delicate fish was intricately plated and matched beautifully by the complex, age-honored characteristics of the wine.

  5. Venison Wellington with 2011 Domaine de la Romanée-Conti Richebourg Grand Cru and 2006 Domaine de la Romanée-Conti La Tâche Grand Cru: The flavors of the venison were elevated with the richness of the Richebourg and the smooth elegance of La Tâche, showcasing the wine’s depth and complexity.

  6. Vacherin Mont d’Or with 2015 Domaine de la Romanée-Conti La Romanée-Conti Grand Cru: The cheese course paired with the celebrated Romanée-Conti highlighted the wine’s delicate nuances, although opinions differed on the pair’s compatibility.

The dinner was praised not only for the thoughtful pairings but also for the impeccable service that surrounded it. Each detail was considered, from wine storage temperature to serving techniques, leading to a seamless dining experience.

Schuster concluded by reflecting on the rarity of such events—where great wine and exceptional cuisine come together in a manner that both respects and enhances the qualities of each. It was a night of discovery, pleasure, and spectacular dining that left all involved with lasting memories.
