Sommelier Rats: How Rodents Can Distinguish Between Riesling and Sauvignon Blanc

Rats have often been viewed with disdain, especially since their association with historical calamities like the Black Death. Yet, new research reveals a surprising skill: rats can distinguish between the scents of Riesling and Sauvignon Blanc wines. This discovery may set the stage for a unique career shift for these critters.

In a study conducted by researchers from universities in London, Lincoln, Trento, and Vienna, nine rats were subjected to an intriguing wine sniffing test. The experiment involved four Sauvignon Blancs from France and Chile, and four Rieslings from Germany, France, and Austria. To encourage the rats to differentiate the wines, the researchers conditioned them to associate specific aromatics with rewards.

During the training, the rats were rewarded with treats for correctly identifying the wines by pressing a designated lever. A successful guess resulted in food, while an incorrect choice led to a timeout. The training continued until the rats showed an accuracy rate of 80% over three consecutive sessions.

Following their training, the rats underwent a rigorous examination where they were presented with both familiar and unfamiliar wines. Remarkably, they correctly identified the trained wines 94% of the time and correctly identified 65% of the new wines from the same grape varieties.

The researchers documented that these findings suggest nonhuman mammals possess olfactory capabilities that may rival those of humans, indicating a significant cognitive ability in distinguishing complex odours.

This raises an entertaining prospect: could rats step out from the shadows of the sewers and join the culinary world as elite sommeliers? However, not all rats excelled in this endeavor. One participant, a rat named Peanuts, struggled with the new wines compared to his companions and is not quite ready for the sommelier title.
