Stef Yim, a prominent figure in the vibrant wine scene of Etna, Sicily, brings a unique background to his winemaking journey. Born to a Hong Kong father and a Japanese mother, he spent his childhood in California. After starting his career as a sommelier, he dived deeply into the world of hospitality, fully immersing himself in the industry after leaving college just one year in.
In 2006, Stef began his journey with the Court of Master Sommeliers and commenced winemaking in northern California by purchasing grapes and learning the process. However, it was the allure of cooler climate wines that captured his interest. His winemaking journey took him to Madiran in southwest France, where he developed a passion for local varietals like Tannat.
Stef’s infatuation with volcanic soils grew, leading him to consider various regions. Initially drawn to Tenerife, he ultimately chose Etna due to its mountainous landscapes, rich soils, and the opportunity to work with ancient vines. He began his venture in Etna in 2015, acquiring nine vineyard plots across different elevations on the mountain.
The volcanic soils of Etna, characterized by lapilli—tiny fragments replenished by eruptions—set the region apart from any other wine area globally. His vineyards were certified organic last year, exclusively sourcing grapes from his estate. Unfortunately, the 2023 vintage presented challenges with downy mildew, resulting in a 60% crop loss.
In winemaking, Stef adopts a flexible approach, adapting techniques according to each vintage rather than adhering to a predefined method. He uses sulfites judiciously, aiming for low levels while aspiring to create age-worthy wines.
