Karol Nizio is crafting outstanding natural wines on his family estate in Poland, near the Ukrainian border. His parents transformed a dilapidated manor into a hotel and restaurant in 2010. Two years later, they expanded by acquiring adjacent land and planting vines. Karol became involved in 2016, shifting the winery’s focus from conventional methods to launching Nizio Naturals, a venture combining wine production and farm-to-table dining.
The estate spans 60 hectares, 8 of which are planted with vines, predominantly resistant varieties. Complementing the vineyard are sheep, cattle, and a vegetable garden, all aimed at creating a self-sufficient operation. The property, certified organic since 2020, employs regenerative agricultural practices, including greenhouses and seasonal menu offerings, while focusing on vegetable fermentation.
