He initially pursued a career in marketing across various sectors before deciding to delve deeper into the world of wine, obtaining an MBA in luxury brand management focused on food and wine from the IAE-Sorbonne. Rimoldi emphasizes the unique versatility of Champagne, where different blending and aging processes yield a variety of styles, showcasing the complexity of this beloved beverage.

Over the years, he has observed an evolving interest in Champagne among consumers, noting a shift from habitual buying toward exploring diverse producers and experiencing higher-quality offerings. He believes that pairing Champagne with food is often underrated, promoting it as an easy companion for various dishes, including fresh fish, roasted poultry, and even certain cheeses.

Rimoldi fondly recalls a simple yet sublime pairing he discovered during the COVID-19 lockdown: pink radishes served with butter and salt alongside a non-vintage blanc de blancs Champagne—a reminder of the beauty in simplicity.

He enjoys cooking for friends and shares that his go-to dish often changes with the seasons, highlighting lamb and roasted seasonal vegetables as favorites.

When it comes to visiting the Champagne region, Rimoldi encourages visitors to explore both the grand houses and small producers, advising that memorable dining experiences await in local establishments where one can taste unique Champagnes not found outside France.
