Brunette Clear, an innovative coffee liqueur, has recently been introduced by Bordeaux Distilling Co, marking a ‘world first’ with its organic transparent formula. This liqueur aims to reduce waste in the coffee industry by incorporating two by-products of coffee production: cascara, the de-pulped coffee cherry, and coffee blossom.
Brunette Clear (22% ABV, priced at £30.75 for 70cl) is created from organic French wheat. The coffee components are macerated in wheat spirit for two weeks and distilled before being combined with a distillate generated from the filtration of the company’s Brunette Organic Cold Brew Coffee Liqueur. This process ensures a product that not only combats waste but also offers a unique taste profile.
Unlike traditional coffee liqueurs that are often high in sugar, Brunette Clear has a lower sugar content, making it a light option that’s perfect for sipping as a digestif. Its flavor is described as a blend of dried fruit and floral notes, complemented by a subtle coffee creaminess. Additionally, it can be creatively used in cocktails, particularly in a Clear Espresso Martini, where equal parts Brunette Clear and vodka are stirred over ice and strained into a chilled Martini glass.
Switching gears to cocktails, the Lumen, crafted at Lumen Cocktails and Cuisine in The St Regis Rome, is recommended as a must-try drink. This cocktail features a harmonious blend of Italicus, Peychaud’s Bitters, and chilled Champagne. Fabio Borro, the director of food and beverage at the hotel, highlights that the Lumen embodies the brightness and elegance of Roman culture while being simple to prepare.
The recipe for the Lumen includes 30ml of Italicus, 2-3 dashes of Peychaud’s Bitters, and chilled Champagne, served in a Champagne coupe glass and optionally garnished with lemon peel.
