Arnaud Boué, hailing from Bourgogne, embarked on his vinous journey without the traditional backdrop of a winemaking family. Instead, he pursued a degree in enology and decided to broaden his horizons by gaining experience overseas in countries like New Zealand and South Africa. These adventures provided him valuable insights into diverse climates.
Upon returning to Bourgogne, Arnaud spent a decade honing his skills, working both in large and small wine estates. His experience included managing operations at Boisset, as well as immersing himself in the organic practices of smaller vineyards like Duband and Lambrays.
In 2018, Arnaud seized the chance to rent a small house in the Hautes-Côtes, which marked the beginning of his personal venture into winemaking. He produced 5,000 bottles in his inaugural year, and by 2022, he scaled up his output to 20,000 bottles while expanding his holdings to 7 hectares.
Arnaud emphasizes a preference for freshness in his wines, distancing himself from overly ripe styles. He expresses a commitment to achieving phenolic maturity in his grapes, aiming for a balance of ripeness without sacrificing the brightness and freshness that defines his palates: "I like a crisp, fresh mouth… I am a terroir extremist."
