At Polychrome, Taittinger’s new restaurant in Reims, President Vitalie Taittinger aims to transform how Champagne is integrated into dining experiences. The restaurant, which opened in July after the renovation of an iconic Art Deco structure, is designed to celebrate the harmonious pairing of food and Champagne. Taittinger believes that the richness of Champagne can elevate meals, encouraging guests to appreciate its versatility beyond celebratory moments.
The name "Polychrome" reflects Taittinger’s philosophy of blending, as both wine and cuisine come together to create vibrant experiences. Guests can explore extensive options from the restaurant’s innovative wine list, blending different flavors and textures from food with Champagne selections. The menu showcases international influences with locally sourced ingredients, featuring unique condiments that allow diners to experiment with Champagne pairings.
Taittinger’s commitment to culinary arts is not new; the family has a history of advocating for chefs through competitions aimed at promoting regional cooking. Each year, a guest chef will be invited to share their unique interpretations at Polychrome, with Charles Coulombeau being the inaugural chef to present his vision.
The restaurant’s ambiance, characterized by floor-to-ceiling windows and colorful glass panels, enhances the intricate interplay between art, architecture, and gastronomy. Guests begin their visit by exploring the historic terroirs of the St-Nicaise site, featuring 13th-century cellars insulated with chalk, perfect for aging their esteemed wines.
In addition to dining, Taittinger offers new tasting experiences that allow visitors to explore different cuvées in intimate settings. The range includes the Instant Gourmet Experience and the L’Instant Duo Comtes, which focuses on their signature cuvée – a nod to the heritage of Champagne.
Vitalie brings an artistic touch to Taittinger’s narrative, having previously trained in the arts before entering business. The concept store, Chromatique, aligns with her vision, offering an array of local artisanal products that celebrate craftsmanship alongside their esteemed wines.
This creative endeavor seeks to redefine not only how Champagne is enjoyed but also how the Taittinger legacy continues in promoting both exceptional wine and culinary arts.
