Therianthropy, a mythical process of shapeshifting, aptly represents the transformation of nature into wine at Therianthropy Wines. Established in late 2019 in Creemore Hills, Niagara, Ontario, this collaborative garagiste project, spearheaded by winemaker David Eiberg, emphasizes low-intervention wines crafted from sustainably sourced grapes across Ontario.
Every aspect of their winemaking process reflects commitment to natural practices: all ferments are spontaneous, and they avoid fining and filtration, resulting in wines that feature low to no sulphur additions. Environmentally conscious, they use recyclable plant-based composite corks and seal their bottles with organic beeswax buttons.
Each wine in their collection boasts a unique identity, a charming blend of human and animal characteristics, which are detailed on their website. The labels are designed by Michel Tolmer, making them instantly recognizable among natural wine enthusiasts. As they evolve with each vintage, Therianthropy has carved out a niche for itself with a collection of characterful cool-climate, single-vineyard wines that change annually based on the grape conditions and contract availability.
