Projekt Wildtyp is a burgeoning winery in Burgenland, Austria, currently in its fifth year of operation. Founded by Boris Kovacic, a former academic with expertise in microbiology and genetics, the winery’s name reflects its foundation in scientific principles. After dedicating 18 years to academia, Kovacic shifted his focus to winemaking in 2021, aiming to highlight the natural genetics of grapes in the region.

The winery employs a natural winemaking approach, with many of its wines produced using a zero-zero method, meaning they contain no additives or processing aids—sulfites are only added when deemed absolutely necessary.
