I arrived in Macau to judge the Wynn Signature Chinese Wine Awards and dined at Lakeview Palace, one of the premium restaurants at Wynn Palace. The evening featured an exquisite set menu paired with exceptional Chinese wines that complemented the dishes perfectly.
Among the culinary highlights was a braised fish broth enhanced with aged tangerine peel and assorted vegetables, followed by steamed lobster dressed in a spinach sauce with shredded tofu. The standout dish was the crispy wagyu, which was simply brilliant, alongside the perfect fried rice.

Sacred Snow Mountain Hua Luo Xiang Yun Ice Wine 2023, Yunnan, China: This ice wine, crafted from Vidal grapes, was concentrated and rich, presenting flavors of apricot and lemon, ending with a hint of spice. It was beautiful and scored 94/100.
